Bring an exotic and playful touch to your dessert with this original recipe that revisits sushi in a sweet version! These are made with vanilla rice pudding, mango and fresh kiwi then they are served with redcurrant jelly. 100 g of round rice
75 cl of milk
1 small mango
2 tbsp. 1 teaspoon vanilla extract
15 mint leaves
red fruit jelly
Heat the milk with the sugar and the vanilla extract. Rinse the rice, put it in a saucepan and pour in the hot milk, stirring for 2 minutes over medium heat.
Continue cooking over low heat for 35 minutes until the liquid is absorbed, stirring often. Peel 1 kiwi and 1 small mango, slice them.
Make quenelles of cooled rice with 2 teaspoons. Surround them each with 1 mint leaf, hold them with spades and cover with fruit. Serve with a red fruit jelly.
